Break out the Crock Pot for tailgating

Shredded chicken on pretzel buns

GRAND RAPIDS, Mich. (WOOD) September is the perfect time of year to break out the Crock Pot and start cooking with some comforting fall flavors! Amy Sherman has some delicious ideas on a new spin to tailgating food.

Black Bean and Pumpkin Soup

  • 1 large onion, diced
  • 1 red pepper, diced
  • 1 can (14.5 oz) Red Gold tomatoes, diced (with chiles if you like it hot)
  • 3 cups chicken or vegetable broth
  • 1 cup pumpkin beer
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 2 cans (15 oz) black beans, rinsed and drained
  • 1 can (28 oz) pumpkin
  • 2 tablespoons honey
  • 3 tablespoons fresh cilantro, chopped
  • 1 teaspoon lime juice
  • salt and pepper to taste

Turn the crock pot/slow cooker on to high.  Add the onion, pepper, tomatoes, broth, beer, chili powder, cumin, oregano and black beans.  Stir well.  Add the pumpkin and the honey and stir to combine.  Cook on high for about 3 hours, or on low for about 5.   Stir in the lime juice, salt and pepper.  Adjust the seasoning as needed.  Serve with diced avocado, or pepitos on top.
Shredded Sweet and Spicy Chicken

  • 1 1/2 to 2# chicken breasts, trimmed
  • 1 can Red Gold tomatoes, diced or petite diced
  • 1 cup peach preserves
  • 1/4 to 1/2 cup chipotle sauce (it’s spicy so add gradually)
  • 1 cup barbecue sauce (I like Stubb’s)
  • fresh parsley
  • salt and pepper
  • pretzel buns for serving

Turn the crock pot on to low.  Pour in the tomatoes, peach preserves, chipotles and barbecue sauce and stir well to combine.  Add the chicken and turn to coat.  Let the chicken cook for about 6 hours, or until cooked and ready to shred. Remove the chicken from the pot, and shred with two forks.  If you have picky eaters, use an immersion blender to blend the sauce into a smooth consistency.  Place the chicken back in the pot and coat with the sauce.  Serve on pretzel buns.

You can make this the day before, store the cooked chicken in the sauce in the fridge , then rewarm. Also, you can freeze it for up to a month.
