She shares some quick and easy meal preps for the on-the-go mom.
You’re rushing out the door to drive the kids to school, but forget to make yourself a healthy breakfast because you’re short on time.
Action Item: Make-ahead smoothie packets for the freezer. Assemble individually portioned bags on the weekend and simply blend with Greek yogurt and ice in the morning. Place in a travel cup for on-the-go sipping.
You’ve just completed your workout and now you’re starving, but have to run a few errands before you’ll be home again.
Action Item: Pre-portioned bags of homemade trail mix with nuts, dried fruit, shredded coconut, etc. can be stashed in your glove compartment, gym bag, or purse. Having proportioned snacks in your pantry can come in handy when the kids need an after school snack as well!
Lunch-Time Rush Headache
Your 11:30 a.m. meeting runs late and your 12 o’clock meeting is 10 minutes away. You need lunch and don’t want to resort to delivery.
Action Item: Deli roll-ups to the rescue! When you’re prepping lunches for the kids, roll up your favorite sandwich meat with a slice of cheese and stash in a re-sealable plastic bag or storage container. At lunch time, simply unroll and place between your favorite bread or eat with lettuce cups for quick snack. Your bread won’t get soggy and you can access a protein-packed meal or snack in no time.
It’s 6 o’clock, your kids are starving and you have no idea what to make for dinner.
Action Item: Take 30 minutes on Sunday afternoon to meal plan for the week. By taking the time to plan out what to serve, you can avoid the dinner hour headaches. Plus, you’ll save money by avoiding costly take-out and home cooked food is easier on the waistline as an added bonus.
