GRAND RAPIDS, Mich (WOOD) – While some of us are looking forward to the Thanksgiving feast, others are looking forward to the leftovers! EightWest’s favorite chef from Gun Lake Casino came in studio to show this fun and tasty leftover recipe.
Thanksgiving Replay enchilada style
Any other things you have left from Thanksgiving
-Preheat oven to 325F
-Slightly warm the stuffing in the microwave, it should be warm to the touch.
-Layer Mashed Potato in the bottom of a Casserole dish.
-Place 3 to 4oz of stuffing between 2 pieces of plastic wrap. Roll out thin with rolling pin or flatten with the bottom of a large pan. Remove the top layer of the plastic wrap, and begin laying the remaining ingredients in the center of the stuffing.
-Roll the stuffing around the ingredients, using the bottom piece of plastic wrap as a guide, removing the plastic as you go. Place stuffing roll on top of mashed potato seam side down.
-Repeat this process and line the casserole dish with stuffing rolls.
-Cover with foil and bake for 25 to 30 minutes, or until internal temperature reaches 165F.
-Remove foil covering for last 5 minutes of baking to crisp up the stuffing.
-While this is baking, heat Gravy on stove top and adjust seasoning to taste with Chili Powder and cayenne pepper. Remove from oven and top with Gravy.
-Garnish with Chopped Parsley and Crispy Onions and serve.
